Edible Berkshires Potato Latkes

Elise Abrams was featured in the popular magazine, Edible Berkshires, for the Winter of 2013, with her delicious Potato Latkes recipe. Pictured on one of her gorgeous Royal Worcester Art Nouveau dinner plates from her extensive inventory at Elise Abrams Antiques, these are latkes that you won’t soon forget

Makes approximately 15 latkes, depending on size

1 ½ lbs Yukon Gold potatoes

¼ grated, small onion (Approximately 2tbs)

2 eggs, well beaten

1 tsp salt

Freshly ground pepper to taste

½ cup high-temperature vegetable oil, such as safflower or sunflower

Grate potatoes with a Julienne grater, if available. If not, use a coarse grater, hold potatoes lengthwise to create “shoe-strings” rather than short shreds. The goal is to have elongated pieces. It is easiest in a Cuisinart, if available.

Grate the onion and add to potatoes.

Place the grated potatoes and onion in a bowl and gently squeeze out excess liquid.

Mix in the beaten eggs, then add salt and pepper and mix well.

Meanwhile heat just enough oil to cover the bottom of a cast iron or other heavy pan on medium-high, almost until smoking, careful not to burn it.

Drop 1-2 heaping tablespoons of potato mixture into hot oil and flatten with the back of a spatula. Continue to add latkes into the hot oil, but be careful not to overcrowd the pan, so the edges can brown nicely. Check for doneness by lifting the edge and avoid flipping until fist side is completely browned.

Turn and cook the other side, pressing gently.

Drain latkes on paper towels and place on baking sheet in  oven to keep warm until finished cooking.

Serve with applesauce and/or sour cream topped with finely chopped scallions.

*Hint: To make a chunky and easy applesauce, peel and chop 2-3 apples and cook until somewhat softened. Add cinnamon and or nutmeg to taste. Add your favorite jar of applesauce to mixture for a varied texture and flavor.

Dining for Women

We recently had a wonderful opportunity to put our passion for food and dining to a great cause. This week, we took part in an amazing organization called Dining for Women. Dining for Women is a dinner giving circle. We "dine in" together once a month, each bringing a dish to share, and our "dining out" dollars (what we would have spent if we had eaten at a restaurant) are sent to programs empowering women worldwide. We then combine all donations from hundreds of chapters to support one carefully selected international program a month. We fund grass-roots programs in education, healthcare, vocational training, micro-credit loans, economic development and now I am happy to report MENTAL HEALTH. These programs are aimed to improve the living situations for women and their families, by providing the tools they need to make changes.

Please take a look at the link to this month's program. We had the pleasure of a personal visit and amazing presentation from the parents of Peter Alderman, who perished on 9/11 at the World Trade Center. They have founded the Peter Alderman Foundation that focuses on women's mental health issues in northern Uganda to honor him.

Berkshire Designer Showcase

We were so pleased and excited to participate in the recent Berkshire Designer Showcase at Ventfort Hall, Lenox’s Gilded Age Museum. The local landmark, originally built by George and Sarah Morgan, the sister of legendary financier J. Pierpont Morgan in 1893, has undergone an amazing transformation over the last decade, as the Ventfort Hall Association has worked tirelessly on its restoration. Nearly demolished in the 1980’s by a nursing home developer, the Association was formed in response and was able to purchase the property with the help of private donors and loans, and a five-year loan from the National Trust for Historic Preservation. To furnish the newly completed second floor, the association worked with 14 Berkshire based designers to create unique spaces that complement each room.

We were happy to be included in the group of wonderful Berkshire interior designers, artists, artisans, and antique dealers who worked on these extraordinary spaces. Pieces from our collection can be viewed in the Salon du Jour Bridal Suite at Ventfort Hall designed by Cecil K. Pollen of Kitchens & Interiors (pictured above). Ventfort Hall is open daily, Monday-Thursday 10 to 5, Fridays 10 to 7, and weekends 10 to 3. The showcase will be on view until next winter.
